- 1 oz Cream of Coconut (like Coco Lopez)
- ½ oz Fresh Lime Juice
Combine: Add the rum, pineapple juice, cream of coconut, and lime juice into a cocktail shaker.Shake: Fill the shaker with plenty of ice and shake vigorously for at least 15 seconds. The cream of coconut needs a good workout to fully emulsify and create that smooth, uniform texture seen in your photo.Pour: Strain into a chilled highball or Collins glass filled with fresh ice.Garnish: Add your pineapple wedge to the rim and drop in your metal straw.
